These oats are nutrient-packed and delicious! I try to keep at least one jar on hand at all times for a quick breakfast for me or the kiddos, or for a few bites when it’s not mealtime but I’m feeling peckish. You can mix this up and let it set up overnight in the fridge, or just wait four hours or so and it will be ready. You can also top it any way you like: blueberries, strawberries, a drizzle of almond butter, dairy-free chocolate chips, coconut shavings, extra cinnamon – whatever lights you up.

Ingredients

  • 1 large ripe banana, mashed

  • 1/4 cup almond butter, peanut butter, or other nut butter

  • 1 cup rolled oats

  • 1 tbsp chia seeds

  • 1 tbsp ground flaxseed

  • 1 tsp cinnamon

  • 1/2 tsp vanilla extract

  • 1 tsp date sugar, maple syrup, agave, or other sweetener

  • 1 cup unsweetened non-dairy milk (almond, soy, or whatever you have)

Directions

  • In a large bowl, combine all ingredients with the mashed banana. Using a fork or whisk, blend well.
  • Pour the oats into two containers, cover, and put in the fridge overnight or for at least four hours.
  • When you are ready to eat, stir the oats, add a bit of non-dairy milk if they are too thick, add your favorite toppings, and enjoy!
